Description
Saperavi is and ancient grape from the Republic of Georgia. Its planted on a biodynamic and regenerative vineyard over alluvial and calcairous soils. The hand harvested fruit is fermented spontaneously with wild yeast in qvevri, amphora buried in ground. As the wine is fermented its bottled to allow the fermentation to complete in the bottle, trapping all the natural gasses and creating bubbles. The method is known as method Ancestral or petnat. It less pressure than traditional method champenoise. This wine is deep red color with wild blackberry aromas and flavors explode off the glass. Its perfect with cheeses, and with roasted Turkey!
