Here they retain that salinity by a fully 'gravity fed' system in the winery (multiple floors, wine feeds down by gravity, no pumps!). This careful handling of the wine allows it to retain its purity and express its seaside proximity with super-fresh citrus fruit and a mild salty hint that matches up ideally with all seafood.
