Caymus always produces a big, rich Cabernet Sauvignon. This consistency in stylistic achievement year after year is what has made Caymus a household name. In 2021, Caymus introduced a California-appellation wine sourced from prime Cabernet locations throughout the state. The outstanding quality of the statewide sourced fruit is treated in the same manner as the Napa Valley wine. It is supple, dark, rich, plush, full-bodied, intense, and balanced with polished textures, velvety tannins, and medium acidity. The luxurious palate exudes flavors of chocolate, blackberry, cinnamon, black cherry, dark plum, vanilla, cassis, and oak, with a hint of leather. Like its Napa stablemate, this wine screams for steak, short rib ragu, BBQ brisket, or grilled lamb.
