End of alcoholic fermentation in vats before racking then malolactic fermentation. Racking then aging for 3 months in stainless steel vats protected from oxygen. Filtration before bottling under inert gas. A light raspberry color. The nose is of wild strawberries, a little leathery and slightly peppery.
