Menetou Salon - Sitting west of Sancerre, the appellation is smaller (611 hectares) compared to Sancerre (3,500 hectares). Antoine’s grandfather was one of the founders of the appellation when they settled in the region to farm and make wine. The winery has been organic certified since 2002 and all harvests are manual. Sulphur is used very sparingly at bottling, and only to maintain the highest quality of wine in the bottle. Indigenous yeasts lead to a long slow fermentation in temperature controlled stainless steel tanks usually extends into early December. Elevage is also in stainless tanks on the fine lees for several months. -Winery
