Soft, but intense with notes of strawberry and cherry with a whiff of black tea. Aged for 10 months in conical wooden barrels. Even cooler in climate than Burgundy, this is a lighter, paler example of Pinot Noir. The Lauverjat family has been growing grapes in Sancerre for generations until they finally decided to produce their own wines from their 12 hectares of vines in Sancerre and Pouilly-Fume. Rather than using chemicals, they work the soil and use seaweed to prevent disease and grow grass between rows to prevent erosion. They also utilize a clay filtration system that gently filters wines without stripping them of character or producing waste.
