From Spain’s Basque coast along the Bay of Biscay, Txakolina is made mainly from the Hondarrabi Zuri grape. Vines grow on steep, rain-soaked hills and are trained high on pergolas to improve airflow in the humid Atlantic climate. The wine is light and low in alcohol, with bright acidity, citrus notes, and a salty mineral edge—perfect with oysters, anchovies, salt cod, and other seafood. —Armando, Sparrow W&L Co.
