Today, the cooperative has 400 small growers farming 900 hectares of vineyards. The juice was fermented and aged in stainless steel vats to preserve its purity and aromatics. It is dry, well-structured, balanced, complex, medium-bodied, and fresh with zesty acidity. The elegant palate provides green apple, pear, orange blossom, melon, peach, lemon zest, pink grapefruit, mineral, and a pleasant floral note. Try it with grilled whole fish, seafood risotto, lemon-dressed salads, or light pork.
